Ingredients:

1 pound ground beef
1 onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 packet (1.25 ounces) taco seasoning
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) corn, drained
1 can (10 ounces) diced tomatoes with green chilies, undrained
1 cup salsa
6 large flour tortillas
2 cups shredded Mexican cheese blend
Sour cream (for serving)
Fresh cilantro, chopped (for garnish)
Directions:

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion, bell pepper, and minced garlic. Cook for an additional 3-4 minutes until the vegetables are tender.
Drain any excess grease from the skillet. Add the taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Stir to combine and simmer for 5 minutes.
Place 2 tortillas on the bottom of the greased baking dish, overlapping them if needed to cover the bottom.
Spread half of the beef and vegetable mixture over the tortillas.
Sprinkle 1 cup of shredded cheese on top.
Repeat the layers with 2 tortillas, the remaining beef and vegetable mixture, and 1 cup of shredded cheese.
Finish with a layer of 2 tortillas and the remaining 1 cup of shredded cheese.
Cover the baking dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Garnish with fresh cilantro and serve with sour cream on the side.
